Moka pot

The stovetop classic. Rich, bold, and almost espresso — the taste of a lot of European kitchens.

You'll need

  • Moka pot
  • Kettle
  • Stove
  • Tea towel

Step by step

  1. 1Fill the base with hot (pre-boiled) water up to just below the safety valve.
  2. 2Fill the basket with 16g of coffee, level it off — don't tamp.
  3. 3Assemble and put it on medium heat with the lid open.
  4. 4When coffee starts streaming, keep the heat gentle and watch closely.
  5. 5As soon as it splutters and turns pale, kill the heat and cool the base with a damp towel.

If it tastes off

Tastes burnt or metallic

Lower the heat and pull it off the moment it gurgles.

Weak or watery

Use a slightly finer grind and fill the basket fully.

Sputters violently

The heat is too high — medium-low is plenty.
